This baked stuffed clams recipe is delicious. The combination of clams and chorizo are briny, smoky, salty, and all around perfect. Cooking stuffed clams may feel overwhelming, but I promise you it’s not! I’ll show you how to cook stuffed clams – and trust me, you’re not going to want to miss out. These chorizo stuffed clams make a show-stopping appetizer or light meal.
While many seafood dishes are breaded and fried, I kept this one light and healthy with an almond flour instead of bread crumbs. The chorizo adds a ton of flavor – without adding any carbs.
There are many different clam varieties. I used Cherry Stones for the baked stuffed clams recipe, but you can use whatever variety you like or have access to.

How To Cook Stuffed Clams
Shuck the clams, but reserve the juice. Leave clam in the bottom shell but loosen the meat.
PRO TIP: You’ll want to loosen the clams on the bottom shells as well, so that when you go to eat them, they slide out easily.
Cook up the chorizo, onion, red pepper, garlic, and spices.
Then it’s time to add in almond meal and the reserved clam juice.
Add a spoonful of filling to the clams and broil until the topping is golden brown.
PRO TIP: You aren’t actually cooking the clams, but merely warming them up.

- 12 medium Clams (scrubbed clean; more or less if using a different variety; reserve the juice)
- 4 tablespoons Olive oil
- 1/2 medium Red onion (minced)
- 1/2 medium Red bell pepper (minced)
- 4 cloves Garlic (minced)
- 4 ounces Chorizo
- 1/2 teaspoon Paprika
- pinch Cayenne pepper
- 1 cup Almond meal
- Sea salt (to taste)
- Fresh parsley (for garnish)
- Lemon (for serving)

Preheat your broiler.
Shuck the clams reserving the juice. Leave clam in bottom shell but loosen the meat for easy eating.
In a small pan over medium high heat, heat the olive oil. Throw in the onion, red pepper, garlic, chorizo, paprika, and cayenne. Cook until the pepper and onion are soft and the chorizo is browned ,about 5 minutes. Season with salt to taste.
Turn off the heat and stir in the almond meal and 4-5 tablespoons of the reserved clam juice.
Top each clam with a spoonful of filling. Place under broiler for 5-6 minutes or until the topping is nice and browned.
Sprinkle with parsley and serve with lemon wedges.
