Hey friends, let’s talk co*ckTAILS! Even as the country starts opening up a bit, going to a bar for date night isn’t as stress-free as it once was. Instead of letting that bum us out, we’ve been making co*cktails at home and taking advantage of our porch to spend quality time just the two of us or with one or two friends. And thanks to Prairie Organic Spirits, my co*cktail skills have been taken to the next level. WOO!
About Prairie Organic Spirits
If you’ve never heard of Prairie Organic, they produce award-winning spirits made with organic corn that is grown without herbicides and pesticides on Midwestern family farms. My personal favorite recently has been their Cucumber Flavored Vodka. It’s really crisp and mild, which makes it perfect for a bright refreshing gimlet on a warm summer day! To be honest, I have never really been a gimlet drinker, but after googling what to make with a ton of limes I had on hand, it’s become my new go-to. I mean, all you need are vodka (or gin), limes, simple syrup and ice. That’s IT! So simple, so easy, and SO delicious.
Cucumber Vodka Gimlet Recipe
Ingredients
2 oz Prairie Organic Cucumber Flavored Vodka
1 oz fresh lime juice (about 1 small lime or 1/2 of a large one)
1/2 oz simple syrup*
Instructions
Fill a co*cktail shaker with ice. Add Prairie Organic Cucumber Flavored Vodka, lime juice and simple syrup.
Stir or shake until the liquids are combined and very cold.
Strain into a glass with ice and garnish with a slice of lime and/or cucumber. Enjoy!
*You can purchase simple syrup at most stores, but it’s also very easy to make at home! All you need to do is combine 1 part sugar and 1 part water in a saucepan. Bring the mixture to a boil and then simmer until the sugar has dissolved. Remove from the heat and allow it to cool before using.

In case you missed it, I actually have a roundup all about the best board games for two people – it was necessary content for quarantine! When it’s just the two of us, we’ve been big fans of Blokus recently… but now that we’ve been able to have another couple on our porch again, we’ve been all about Exploding Kittens again! Just make sure you trust that the people you’re playing with have been extra cautious these past few months since you all have to touch the cards when you play. If you are worried about that, I’d stick to something like What Do You Meme instead!

On date nights at home, you want to spend more time outside than in the kitchen, right?! I personally love prepping this simple pasta salad during the summer. I just made it last week with the prettiest heirloom tomatoes and Adam can’t stop talking about it! If you have a grill, these chicken sausage skewers are also crazy easy, or you could have some fun putting toppings on grilled pizzas. (My favorite!)
